Just wanted some good old butternut squash soup, but I only had yams.
Luckily I was craving yams last night, and had them already baked. I didn’t end up eating my yams for dinner however, so they were in the fridge ready for microwaving. Quickly blending them with my emulsion blender and throwing them into a pot with vegetable stock, powder turmeric, and powder ginger, was way more satisfying.
I know I’ll want more than just soup in a couple hours, but it’s a great mid afternoon meal for now. As a bonus, it matches with my ayurvedic vata balancing hopes and dreams. I recently took the “What’s Your Dosha” test at Banyan Botanicals, and I am mostly vata, with some pita and almost no kafa. Warm and soft foods help balance and nourish me best, according to my ayurvedia profile.
- One 400g baked yam
- 1 1/2 cup organic vegetable stock
- 2 teaspoons turmeric powder
- 3 teaspoons ginger powder
- 1 clove minced garlic
Blend or mash the baked yams as much as possible. Meanwhile, bring vegetable stock to a slow boil. Add the powders and yam. Blend with emulsion blender or just stir with slotted spoon for desired thickness.
